INGREDIENTS

1/4 c. pure virgin olive oil
Black pepper, coarsely ground
Dash of salt
1 tsp. oregano
1 tsp. basil (fresh dried)
1 Tbsp. rosemary (use mortar and pestle to make a fine powder)
3 cloves fresh garlic, finely minced

DIRECTIONS

Place ingredients, with the exception of the garlic, in a small bowl and blend together. (This amount of topping is enough for one large 15 inch pizza)

Place a teaspoon of pure olive oil on the bottom of pizza pan. Spread out pizza dough in the pan. Place slivers of garlic in the dough, pressing each piece of garlic into the dough. You may use the bottom side of a teaspoon to ensure garlic is secure into eh dough. Pour olive oil/herb mixture over entire pizza dough. (You may add freshly grated Parmesan cheese if desired.)

Set pizza aside on the counter. Set oven temperature to 500degrees. Once oven temperature has been reached, place pizza in the center of the oven to bake for approximately 8 minutes. Check the underside of the pizza at the end of this time to ensure the crust is golden brown.

Sicilian pizza can be served as a bread to accompany a meal, as an hors d'oeuvres, and is also served hot or at room temperature.
