Italian Roasted Potatoes
 
INGREDIENTS

1 lb. Idaho or Maine potatoes
1 tsp. rosemary
1/4 tsp. oregano
1/4 tsp. thyme
1/4 c. olive oil
2 tsp. butter, melted
Salt and pepper

DIRECTIONS

Peel skin from potatoes and quarter. Place potatoes in cold water with salt and boil to tenderness. Remove potatoes from water with a slotted spoon. Discard water.

In a small bowl, blend together olive oil, rosemary, thyme, oregano, butter, salt and pepper.

In a baking dish, layer potato quarters. Pour olive dressing over all. Set oven temperature to broil position. Broil potatoes until golden brown and serve.
