Directions: Blend butter with ricotta until creamy. Add the vanilla and mix well. Gradually add the sugar beating until well blended. Add the egg and mix well. Slowly stir in the flour, baking soda, and salt. Cut dough in half; blend in ½ cup almonds into this dough. Drop the batter from a teaspoon onto a greased baking sheet. Preheat oven to 350 Deg, F. and bake cookies for about 10 minutes. When cookies are cooled sift with sugar as follows: -Ricotta cookies without nuts: unsweetened cocoa and confectioners sugar mixture. -Ricotta cookies with nuts: sift with confectioner’s sugar. |
