Directions: Pound steak with meat mallet. Cover meat with marinade for 2 hours or longer (refrigerate). Filling: In a medium skillet sauté cabbage, carrot, green onion, celery and parsley in butter until tender. Remove from heat and stir in breadcrumbs and salt. Remove meat from marinade – (reserve marinade for cooking). Spread filling mixture on surface of steak. Roll meat in jellyroll style and tie with cooking string. Brown steak in skillet on all sides in olive oil. Place meat in a baking dish; pour reserved marinade and beef broth over stuffed steak. Bake in a 325 Deg. F. oven about 1-1/4 hrs. until meat is fork tender. Serving: Spoon juices over meat. |
