Steak Roll-Ups
steak rollup Ingredients:
1 lb. steak (Sirloin, Top Round, Flank, your choice), thinly sliced

Marinade:
½ cup white wine
¼ cup olive oil
1 teaspoon dried basil or oregano leaves
1 teaspoon Worcestershire sauce
½ teaspoon salt
1 clove of garlic, crushed
Fresh ground pepper

Filling:
¾ cup coarsely chopped cabbage
½ cup shredded carrot
2 tablespoons green onion, minced
1/3 cup celery, minced
1 tablespoon parsley, minced
2 tablespoons butter
2 tablespoons dry seasoned breadcrumbs
¼ tsp. salt

½ cup beef broth
Directions:
Pound steak with meat mallet. Cover meat with marinade for 2 hours or longer (refrigerate).

Filling: In a medium skillet sauté cabbage, carrot, green onion, celery and parsley in butter until tender. Remove from heat and stir in breadcrumbs and salt.

Remove meat from marinade – (reserve marinade for cooking).
Spread filling mixture on surface of steak. Roll meat in jellyroll style and tie with cooking string.
Brown steak in skillet on all sides in olive oil.
Place meat in a baking dish; pour reserved marinade and beef broth over stuffed steak.

Bake in a 325 Deg. F. oven about 1-1/4 hrs. until meat is fork tender.
Serving: Spoon juices over meat.
