Directions: Using a large mixing bowl add flour, whole eggs, egg yolks, salt, butter and the grated rinds. With dough hook knead Struffoli dough until very smooth. Heat oil in a deep skillet. Break off pieces of dough, rolling into ½" thickness and ¼" long. Add dough pieces into heated oil and fry until golden brown in color. Drain on paper towels. Honey Syrup: Pour honey, sugar and a few tablespoons of water into a pan; bring to a boil and simmer until foam disappears. Lower heat and add diced candied fruit. Remove pan from heat. Place cooked Struffoli in a large bowl, pour warm honey syrup over all mixing ingredients with a wooden spoon. Generously shake colored sprinkles over Struffoli. Using a large dessert platter form Struffoli into a tall dome shaking additional ‘candy sprinkles’ over all. |
